Special Sauce





From the chef:

"This makes roughly 1.25 litres of sauce from memory. It goes well with noodles, meats, tofu – anything really. It's pretty tasty.

Ingredients:

- 135g sugar 
- 100g sesame oil
- 130g chilli oil
- 130g cooking wine  
- 370g soy sauce
- 100g dark soy 
- 240g vinegar 
- 350g hoisin sauce
- 200g peanut butter  
- 2 1/4 tbsp corn flour 


Makes:

A lot of happy faces.


Time:

Very fast.


Method:

Add all ingredients except corn flour to a medium-sized, heavy-based saucepan.

Heat on medium heat until hot, add corn flour and mix well with a whisk until dissolved.

Simmer for 2 minutes, then take off heat. It should coat the back of a spoon.

Allow to cool.
