FIELD NOTES
Wild fermented on full skins in two small open vats. One vat hyper-oxidised on day 2 of primary fermentation. Hand plunged twice-daily. Pressed to aged 300L barrels for malolactic fermentation. Barrel aged for 12 months. Hand bottled. Bottle aged for 6 months before release.
TASTES
Soft, textural and delicate; apricot kernel, ripe pear, lemons.

Waiting for the waxing crescent.

This is ready to drink now; however, if cellared for 1-2 years, it will develop even more nuance & texture. Our 2022 Fiano did just that, and after 2 years it was absolutely stunning, and super different to what it was initially. So, holding onto some bottles might be worth it!
